This is Bird Dog's fourth release of Animal Tracks. A blend of several heirloom and tannic apple varieties, it was fermented in stainless steel then aged for five months in bourbon barrels. Bottle conditioned with natural bubbles and sediment. Subtle notes of spirit and oak result in a clean, lighter-bodied cider with wonderful flavor. 40 cases made.
Sweetness: Dry ABV: 7.5%
